Olive Oil Memberships are Open!
The EXAU Olive Oil Club is officially open and we are so excited to welcome new members!
We created the EXAU Olive Oil Club in 2019 at the request of our customers. We were selling out of our oils quickly and folks wanted access to our products year round. The solution was to create an olive oil club and let customers choose how much oil they want delivered to their doorstep each quarter.
How it works…
All memberships ship quarterly (4 times per year)

There are three different levels of membership to choose from…

Excelsis - 2 bottles
Perfect for one or two people that cook regularly. Or four people that don't often cook. Works out to under 1 tbsp per day.

Altiorem - 4 bottles
Perfect for one or two people that love to cook, host, or gift oil regularly. Or four people that cook regularly. A little over 1 tbsp per day.

Magno Valde - 6 bottles
Works well for four people that frequently cook, host, or gift oil regularly. Or six people that cook regularly. Works out to a little over 2 tbsp per day.

Late Summer Lemonade
Early this summer Giuseppe and I planted 300+ baby olive trees (more on that soon!) on our property in Calabria, South Italy. We came home late and it was still very hot both outside and inside the house.
Then Lina, Giuseppe’s mom, sent over some ice-cold lemonade. It had just been pulled from the freezer and was granita-like. It was some of the best lemonade we’ve ever had. But she hasn’t made it since or told us how it’s made (Calabrians and their recipes, ha!).
We had fake fall for a few days and are back to summer weather. It’s now hot and muggy but you know what cuts through just about anything and puts a smile on your face? LEMONS! So we went to campagna, the countryside, to check on the baby olive trees and pick a bunch of lemons from our tree. Naturally, when I got home I wanted some lemonade.
Since we have a super small fridge, we often make beverages or sauces in concentrated form and then add water and ice when serving. This works especially well with coffee, sweet tea, and lemonade! An added benefit, it lets everyone choose their level of sweetness.
For this ‘recipe’, make sure the lemons are thoroughly washed, you’ll see why.
Lemonade Concentrate Recipe:
5 large lemons
1/3 cup sugar
2 cups hot water
Here’s what to do:
Chops the lemons in half, then cut each half into quarters (alternatively, you can cut the lemons into half-inch slices). Place the lemons into a large bowl.
Pour the sugar over the lemons, gently mix so the lemons are evenly coated. Cover and let sit for ninety minutes to two hours.
Heat the water to nearly boiling. Pour the water over the lemons and stir until all the sugar is dissolved.
Remove the lemons after 30 to 45 minutes (taste for any hints of bitterness). Squeeze them out with your hand. Optional: strain. But we like the pulp.
Once the lemonade has cooled, store it in an easy to pour from bottle or jar and store in the fridge. When ready you can pour some into a glass of ice and top the rest off with water. Or you can make a cocktail and use it as a replacement for simple syrup. We love a multi-use beverage!
