Christmas in Italy
If there’s one thing I’m good at it’s snooping out street parties I didn’t know about and this weekend I had a hunch about Catanzaro. This weekend Giuseppe and I headed to the capital of Calabria to see some festive lights. They closed down the entire downtown for pedestrians and had a Christmas parade. Between the lights and the well-decorated storefronts, it was the most perfect pre-Christmas walkabout!
We also stumbled upon an incredible Andrea Cefaly Jr exhibition whose work I’ve definitely seen before but am not very familiar with. If you’re interested here is a link to his Wiki page (use the translate to English option if possible). It took my breath away and was one of the best exhibitions I’ve seen in a really long time, the collection was small and extremely well-curated.
After we went to a bar and had drinks. I consumed one of the best espresso martini’s I’ve ever had. You can watch all the fun on TikTok.
That Apple Pie Recipe
This is the recipe for the apple pie we made shortly before Thanksgiving. This pie is delicious and definitely now on rotation for future holidays. You can add some more spices if you like, we usually stick with the classic cinnamon and nutmeg.
As for the pie crust recipe... when you find a good crust recipe you stick with it. We’ve had a ton of success with this recipe because it turns out so flakey every single time! Lastly, this recipe is for a 9-inch pie.
Ingredients (Filling)
4 tbsp unsalted butter
3 tbsp extra virgin olive oil
3 tbsp all-purpose flour
1/4 cup water
1 cup granulated sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 1/2 lbs Granny Smith Apples (or equivalent) peeled and cored
About 6-7 apples, thinly sliced
Juice of half a lemon
1 egg for the egg wash
Instructions
Make the pie crusts, we like this recipe (can make ahead and freeze).
Preheat the oven to 375 F.
Roll out the bottom pie crust, place it into the pie pan, and stick it into the fridge for 15 - 20 minutes (do the next steps while waiting).
Heat a large pot on medium-low. Add the butter and let it melt then slightly brown (about 3 minutes). Add the extra virgin olive oil and mix with a spatula. Then add in the flour and whisk. Cook for 5 minutes whisking constantly.
Slowly add the water while continuously whisking. Then whisk in the sugar. Reduce for another 3 - 5 minutes.
Add in the cinnamon and nutmeg and whisk. Turn off the heat and add in the apples and lemon juice. Mix well.
Pour the mixture into the pie crust.
Roll out the top pie crust and place it on top. Crimp the edges and make desired design.
Bake at 375 for 20 minutes then lower it to 350 and cook for another 30 to 40 minutes until the pie is nice and brown on top and the apples are cooked through.
Let the pie sit for at least 1 hour (we like to wait 3 hours) before serving.
