The Rebrand
In 2017 we designed our original EXAU labels and loved how clean and modern they looked. Our label manufacturer even had our bottles on display in the showroom.
In 2018 we started selling our oils (out of the back of our car! lol) to customers in California. At the time pretty much nobody in the US had our original bottles. This is because everything we source is 100% made in Italy and we only work with small, family-owned businesses that are able to get us really great things.
The thing is, our original bottles coupled with our original labels are what made EXAU stand out and feel unique. But the industry has changed so much over the past few years.
Then in 2022, there were rumors of a glass and bottle shortage so we began sourcing super early. We even considered custom bottles but that didn’t feel right...
The pandemic taught us that we need to be able to pivot and make changes no matter what. Sometimes that means changing your bottles and branding even if you don’t really want to.
Being a micro business, especially in the olive oil industry, is quite challenging. We’ve come across a fair share of closed doors and barriers, yet have managed to carve out a space that truly feels like ours. And this is something we’re so fortunate to have.
Customers have said they think Giuseppe is shy and soft-spoken from social media. I can guarantee you that’s not the case. He’s usually the first to embrace change and push forward with new ideas and this time was no different. Hmmm, this sounds oddly familiar to how EXAU got started in the first place.
On the other hand, I’m not the best with change. I resisted a rebrand because I was attached to our original bottles and labels. But if I’m being honest, it’s just what we needed before the launch of our book, the exit of the pandemic, and what really feels like a new phase of our professional careers.
This not only feels like a fresh start but a better representation of us and EXAU.
If you’re a long-time reader thank you so much for being with us for the past few years. You’ve seen EXAU evolve as a brand in all its shapes and forms and this really feels like a ride we’ve been on together (remember the bubblewrap/cardboard wrap/other packaging oddities?! LOL).
Alas, it was a loooong road to the nice white custom EXAU boxes.

What the Label Symbolizes
These labels hold so much symbolization for both the region of Calabria, southern Italy and the people who planted and cared for the trees over the past century.
The head is from the goddess in our book, The Olive Oil Enthusiast, and is an homage to Magna Graecia (Great Greece), the zone where our groves are located along the Ionian coast.
The olive tree was traced from one of the oldest trees on our property planted by Giuseppe’s grandfather.
The names Lina, Turi, and Avus are for family members who planted the trees we harvest from.
The colors, now more intense, reflect not only each oil’s namesake but the location of the trees. The Turi, blue, is produced with Carolea trees that sit above a cliff that drops down to the water.

What to Make
Now that we have the olive oil situation sorted we can talk about the fun stuff, what to make!
Tomatoes are starting to pop up at our local markets, which means it’s time to make this super creamy pasta with tomato sauce.
If the tomatoes in your area are still looking a little unripe you can give this tomato salad a go. We really like using slightly green ones because they have less liquid and are crunchier.
Speaking of salad, this is a great dressing recipe.
We’ve been enjoying cucumber season. Here’s how we use it to make a quick salad:
Ingredients
1/4 red onion finely sliced
1 spicy pepper finely sliced
2 to 3 tbsp apple cider vinegar
3 to 4 cucumbers peeled and chopped into 1/4 inch thick half rounds
4 tbsp or so of extra virgin olive oil (Turi)
Instructions
Add the onion, spicy pepper, vinegar, and one large pinch of salt to a bowl then mix. Make sure the onion slices separate.
Add the cucumber but don’t mix. Stick the bowl in the fridge for 30 to 60 minutes.
When ready to eat just add the olive oil, mix, and salt again to taste.
This can be made up to a day ahead of time!
