Carciofi Fritti Recipe
Artichoke season is what we look forward to after the holidays are over. There is a frutti vendolo who drives by the house at least 4x a week and the only thing he sells from February to late April is artichokes. It’s currently our favorite truck and he gets flagged down every 3 houses or so.
This carciofi fritti recipe is simple, like most Italian food. However, cleaning artichokes can feel tedious. With some practice, it becomes easier and you begin to move very quickly, and eventually, you begin to enjoy the process.
This is Lina's recipe and took 1.5 months to capture because it’s very challenging to slide a scale under the bowl and gather correct measurements. She moves so quickly in the kitchen and everything is so automatic. It also doesn’t help that her measurements consist mostly of statements such as ‘7 large spoonfuls’, ‘when it looks good’, ‘I can’t remember', and ‘when it coats the artichoke’. Then halfway through she says something hilarious and distracting and we forget to measure the last 3 ingredients so have to try again in 2 days. It’s Italian inefficiency and joy at its best!
The good news is that most of the recipes we share are flexible and adjustable. Practice certainly makes perfect with fried artichoke. The first time I made them they came out mushy (I boiled for too long). With some adjustments to timing and keeping an eye on the oil you’ll have artichokes popping out of the fryer just like Lina’s.
