A Guide For Fagioli (Beans)
We've spilled the fagioli on our bean 'recipe' : ) Well, it's actually more of a guide, meant to help you navigate the process of soaking and cooking beans. We also cover soffritto, which you know we have strong opinions on.
You can use this guide for most legumes including peas and lentils. Take it and make it your own. Experiment with the seasoning (sub with thyme or add bay leaf) and see what you like. Our go-to seasoning trio is dried fennel, rosemary, and sage. But black beans are incredibly delicious with bay leaf!
For cannellini, we start with guanciale/bacon and a soffritto. But for garbanzos, go for a classic veggie soffritto (extra carrot). We also often blend garbanzos to make a purèe (add a splash of water because it's thick) which can then be used as a pasta sauce. The cream will thicken up extremely fast when mixed with pasta so make sure to reserve enough pasta water. There's no correct pasta shape for this, but try something short like penne or rigatoni.
And of course, there's pasta e fagioli, a classic, but TBH we prefer a creamy bean purèe (please don't tell).

Oil For Your Beans
Definitely go for the Lina if you have any plans on making beans in the near future. It can be used in both the soffritto and as a finishing oil. The Lina is robust and provides deep flavors which stand up well with legumes.
