A Calabrian Update
Ciao! It feels like forever since we last spoke and TBH we can’t tell if it’s because of harvest or time truly is passing us by. Giuseppe and I have been in the groves harvesting for the past few weeks and are now very grateful for the current storm as it gives us a breather.
The weather has changed and with it our diet. It’s pomegranate season and our trees are taking things very seriously, producing as many pomegranates as close to the size as a human head as possible. Their efforts don’t go unnoticed as we gleefully fill our baskets (and mouths). The persimmon tree on the other hand appears to be on holiday, snoozing away and already calling it quits after 1 week. Rude. Thankfully persimmons are not in short supply in Calabria.
Also in season are apples from Sila, from which we made the most delightful apple crumble! This recipe calls for nuts in the crumble part of the crumble (say that 6 times fast). TBH you could skip the walnuts completely and add more oats OR toast the nuts so they're crunchy. When we first made this recipe the walnuts ended up being too soft and the whole point of a crumble is to have some buttery crunchy bits on top! Lastly, don't forget to add a pinch of salt.
Giuseppe has taken a step back from the kitchen leaving me in charge of many daily meals (there’s a 30% chance the meal will be a flop, but we’re still having fun). I’m currently loving radicchio salad with pomegranates, walnuts, EVOO, and vinegar. I’m also experimenting with frozen pea pasta sauce. Whenever I make it I'm reminded in equal parts of my old college roommate who was from the midwest (think hotpot) and baby food. However, I'm here to say the result is always a creamy, sweet, delicious sauce that fits perfectly into a scoop-shaped pasta. Speaking of creamy sauce….
Season of Mushroomy Sauce
Tis the season for yummy, scoopable, decadent sauces. And remember, it’s mushroom season folks which means it’s time for fettuccine ai funghi porcini!!! It's the recipe where the fats unite:
extra virgin olive oil + butter = the stuff of fantasies
We do dream about this pasta and actually worry about the day the freezer runs low on fresh porcini because that’s the day when we can no longer eat this pasta. If fresh/frozen/dried porcini are not available in your area, no worries. Head to your local market and scoop up a beautiful bouquet of fungi babies. Turi Is Back In Stock!
It’s been sold out since summer and we’re so happy to be able to offer this oil again right in time for Thanksgiving. This will be the last restock for the 2020 harvest oils so if you’re planning on purchasing for the holidays or gifting this is it!

It’s Q4 which means we ALL have the joy of entering the abyss of hot mess shipping season! But don’t worry, this holiday season we’re only shipping via FedEx/UPS with very few packages shipping via USPS. Packages *should* arrive to your doorstep within 5 business days, however, expect delays of 2 - 3 days. We recommend ordering oil 2 weeks before you need them. If tracking #’s are not updating within 3 days of placing your order please email us and we will do our absolute best to get things sorted. Important dates below:

Preorders Coming Soon
2021 harvest preorders will be released in the upcoming week(s)! New oil *should* arrive in January and will be part of the early 2022 EXAU Olive Oil Club shipments. Preorders will be giftable. We do ship to all 50 states in the US! Details will be shared soon.
