Welcome To EXAU Harvest 2021
Ciao! It's Skyler and Giuseppe from EXAU. We cannot believe it’s already that time of year. Olive harvest 2021 is well underway and we're crushing it (pun intended). Here’s what our harvest day looks like:
5:20am wake up
7:00am lay nets
Harvest for 7 hours
3:00pm olives are in the mill
We’re milling within our usual 7-hours, it’s incredible the difference a few hours makes. The Turi is exiting the separator incredibly dense, highlighter green, and with notes of tomato. In fact, last night I stood on a ladder at the top of the tank and got blasted in the face with tomatoes and greens *heaven*.
Since it’s the beginning of October, most of the olives are still green with some just starting to turn to purple. While this gives us a lower % yield, the oil is exquisite.
We wrapped up harvest on property #1 in our fastest time ever (!!!). Is this what it’s like to be able to grow your business? THANK YOU for your support over the past year(s). Filtered vs Unfiltered Olive Oil, What Is The Difference?
You’re scrolling through social media and an influencer/celebrity/chef/etc attempts to shove unfiltered olive oil content down your throat. Stating it’s ‘all natural’ and ‘has so many health benefits’. *cringe*. Well, it’s true, unfiltered extra virgin olive oil does have many health benefits.... So does filtered extra virgin olive oil. So what's the difference?
Olive oil is nuanced. It’s a food that has a shelflife and throughout its shelflife, it changes. Think of unfiltered oil as freshly pressed fruit juice and filtered oil as frozen fruit. Both have incredible health benefits but one needs to be used much faster than the other.
But doesn’t olive oil last for 2 years? Well, it does… if it’s filtered. Do you see how dense unfiltered oil is? She’s THICC. And that density comes from olive particles. Learn more about the filtered vs unfiltered debate today.
