After one of the hottest summers on record in Calabria, itβs finally cool enough to properly make and enjoy parmigiana. Thankfully eggplant season is still at its peak, so we see endless parmigiana for the foreseeable future! After all, itβs the perfect food to get us ready for harvest, which starts early next month!
This is Linaβs parmigiana recipe. We all came to the conclusion that parmigiana tastes best when the eggplants are fried but not breaded. We also use Calabrian provola instead of mozzarella which tends to make this dish very soggy.

A Visit to Reggio Calabria
One of the best things to come out of the pandemic was making new friends. Unfortunately, we havenβt been able to meet many of them due to travel restrictions and safety precautions. So imagine our delight when the stars finally aligned and we were finally able to meet travel planner Cassandra Santoro in person in one of the most epic cities.
Last week we went on a glorious visit to Reggio Calabria for a mini-reunion of sorts. The birthplace of Giuseppeβs father, Salvatore, Reggio Calabria is home to an incredible lungomare and some of the best dang gelato weβve ever had (which makes sense because itβs technically one of the best gelateria in Italy). With views of Sicily, beautiful water, and the archeological museum, Reggio is truly a magical place.

Itβs an IG Pasta-Off
We're hosting a pasta competition! Thatβs right. Itβs time to put those well-rested quarantine pasta muscles to use and cook it out for 2 bottles of Lina.

Rules
It doesnβt *have* to be a pasta recipe from EXAUoliveoil.com, but thatβs a good place to start or find inspo : ) Baked pastas such as lasagna can compete!
You can use all forms of pasta such as regular boxed pasta, fresh pasta, or GF pasta. Whatβs not pasta: zoodles, etc. (love you, but thatβs not technically pasta).

The judge will be Salvatore, Giuseppeβs dad, avid pasta eater, olive farmer, and true gentleman. He also has an olive oil named after him, The TURI. Heβs very excited to be the judge as this is the culmination of many years of pasta eating and being subject to our annoying pasta photoshoots in his kitchen.
