Giuseppe and I are still shaken from the fire but all in all, doing well. We are extremely grateful we were able to keep the fire from entering the center of the property. As we've driven around Calabria we've continued to see smoke plumes in the distance and freshly burned landscapes. Fires burn on hills in the night. It's a shame and we're so sad to see the loss of so much wild and cultivated land. We expect rain in the coming days so hope all fires will be extinguished.
We are continuing on schedule with the EXAU 2021 olive harvest. We will keep you posted with harvest and grove updates!

Roasted Tomato Recipe
This is for the lightly charred, oozy, almost jammy roasted tomato lovers. The folks that like their food sometimes almost burnt and saucy. The folks that say ‘Confit? Great, but is it truly jammy?’.
Giuseppe didn’t touch this recipe. He nervously paced in and out of the kitchen shooting me questionable looks and saying ‘if this sucks, we aren’t putting it on the website’. Not 5 minutes after these roasted beauties had finished resting he was shoveling XXL spoonfuls onto bruschetta and putting more bread on the toaster. I personally went the tomato toast route (which I highly recommend).
There are so many things you can do with beautifully roasted tomatoes. I used the Lina to make these, but if you still have the Turi locked away this is a great recipe to use it with!

Saveur: Seeing Us
Four years ago Giuseppe and I were looking through articles discussing olive oil and we kept seeing the same brands in the same outlets and the same misinformation being spread. There was misinformation like:
You can't cook with extra virgin olive oil
You can't fry in extra virgin olive oil
Extra virgin olive oil has a low smoke point
If you cook with olive oil it will lose the health benefits
Extra virgin olive oil keeps indefinitely
The list goes on. And worse, there was also a lot of contradictory information. This was concerning because consumers don't have endless hours or access to the people that work behind the scene in the olive oil industry. And often, in the past, the media didn't interview experts (sorry ya'll, but it's the truth).
Today specialty olive oil producers, large producers, chemists, agronomists, and farmers are all chatting. And that means we all know what's happening in our industry and the expectations which we all must meet.
Four years later we clicked on a link and saw the Pineapple Collaborative x EXAU Olive Oil named the Best Overall olive oil by Saveur and so many wonderful bits about extra virgin olive oil in a single article. That's what we call full circle. Read the full piece here.
