EXAU Olive Oil Club Is (Re-)Open!
Here’s how it works.
The EXAU Olive Oil Club operates similarly to a wine club in the sense that product ships out quarterly (4x per year) and everyone is on the same ‘order schedule’.
You can choose between several different membership levels, however, if you want to upgrade/downgrade your membership level later you’ll need to email us so we can change that for you and allocate inventory accordingly.
Each shipment ‘features’ a different oil and has suggestions for pairings.
By joining the membership you will continue to receive oils that are marked as ‘sold out’ on our website (i.e. Turi and Avus).
There is a limit of 2 memberships per person (please don’t break this rule as we have limited supply).
Memberships are open until the end of July (or until sold out). They will then close until the next shipment cycle which is in October.

Excelsis
2 bottles every 3 months.
Equals 8 bottles per year.
Great for 1 to 2 people that cook regularly or 4 people that aren’t planning to use this regularly.
Altiorem
4 bottles every 3 months.
Equals 16 bottles per year.
Great for 1 to 2 people that are avid cooks/like to host or 4 people that cook regularly.
Magno Valde
6 bottles every 3 months.
Equals 24 bottles per year.
Great for 4 people that are avid cooks/hosts regularly or 6 people that cook fairly regularly.

It's A Lil' Product Restock
Lina, Turi, and Avus have all been restocked! It's a tiny restock, and will likely be the last until we get the new harvest.
Are you internally screaming ‘WHY DON’T YOU MAKE MORE OIL?!’. Same, same. But, it's the olive tree’s universe and we're just living in it. Last year we had a smaller production of the olives used to produce the Turi and Avus. Fewer olives equal less oil. The olive oil industry fluctuates similar to the wine industry in the sense that certain products might be plentiful one year but not the next.
Does this make it easy to scale? Nope! But is it fun? Hell yes! It’s also our favorite metaphor for living in the moment. Speaking of which, if you have any oil sitting in the back of your pantry pull it out and give it a sniff ASAP. If it's still good, use it. And remember friends, olive oil doesn’t get better with age, it gets rancid (read more about best storage practices here).

The lovely Lina has shared her Calabrian tomato salad recipe and well... It’s easy, delicious, scaleable, and adjustable. One size does not fit all. Don’t like spicy peppers? Skip em. Needs more onion? Do it. Have a craving for both garlic and onion? Live in chaos.
The point is this is an anti-recipe. But this salad should definitely have tomatoes, onions, basil, and salt. Find the full recipe here.
